The
two main engines that run any restaurant are the executive chef and
the general manager. These two components control the experience of
every guest. Here is a little background on the two major players who
run teal Bistro Americana.
Christian Clausen, Executive Chef
After graduating the Culinary Institute of Denmark in 1998, Chef
Christian spent time in Brussels Belgium honing his skills and then
was called to cook for her Majesty, Queen Margaret II of Denmark on
board the Royal ship “Dannebrog” and then to the Royal Castle in
Copenhagen, cooking for various State Dinners, including one with
South African President Nelson Mandella. Chef Clausen eventually chose
South Florida as his home for its unique mix of culture, fresh local
ingredients and culinary influences. Chef Christian Clausen has spent
the past 8 years as Chef d’ Cuisine at Chef Mark Militello’s “Mark's
Las Olas” Restaurant in Fort Lauderdale, Florida and gainfully
established Mark's as one of the most renowned restaurants in South
Florida. Now at “teal BISTRO AMERICANA”, Christian brings his
knowledge and enthusiasm to this new venue. “My philosophy encompasses
fresh, local ingredients and simple flavor combinations, simple but
true to form.” “I look forward to your visit”.
Tom Hillan, General
Manager
Tom Hillan, formerly with the South Florida Mark’s Restaurant Group
for over 20 years brings his experience and gracious hospitality to
teal. Tom believes you should always feel like you're in someone's
house," he explains, "almost like you can feel like you are knocking
on their door." His efforts to uphold that philosophy are part of what
brings so much to an experience at teal . "It should be personal," he
says, "no matter where you are”. “I’m looking forward to applying all
